Dishplay was created from a position of direct exposure.

I was in a position to see this problem clearly because I faced it myself, due to an autoimmune condition that limited my ability to eat gluten, dairy, and refined sugar.

That experience placed me on the other side of the table as a guest who depended on clarity, accuracy, and trust.

What it revealed

Being in that position showed me something consistent across hospitality:

allergen safety is often driven by good intentions, but undermined by small, repeated mistakes.

Not because people don’t care. But because systems aren’t designed to support them.

What was missing was clear knowledge about allergies and intolerances inside the organisation — and reliable, visible information for guests.

A deliberated choice

When I decided to act, I made a conscious decision.

I didn’t try to position myself against hospitality by assigning blame. Hotels already operate under pressure, complexity, and responsibility.

Instead, I focused on building something that works with operations, not against them.

From insight to structure
